Thai Peanut Slaw
/Ingredients:
Slaw:
1 head purple cabbage, shredded
4-5 carrots, shredded
1 red bell pepper, chopped
1/2 cup cilantro, chopped
Dressing:
1/3 cup crunchy peanut butter
2 Tbsp lime juice, fresh squeezed
1 1/2 Tbsp apple cider vinegar
1 1/2 Tbsp soy sauce
2 Tbsp honey
1 1/2 tsp sesame oil
1-2 tsp sriracha
1 Tbsp ginger, finely minced
1 large clove garlic, finely minced
Directions:
Combine cabbage, carrots, pepper, and cilantro. Toss to combine.
Mix all dressing ingredients together. Dress slaw just before serving.
Garnish with roasted peanuts, if desired. Enjoy.
