Tomato & Corn Salad
/This summertime salad was so good with grilled pork tenderloin and tostones.
Ingredients:
2 ears of corn, kernels removed from cob
1 jalapeño, seeded and diced
1 medium cucumber, diced
1 cup grape tomatoes, halved
1/3 cup red onion, diced
1 avocado, diced
1/2 cup queso fresco, crumbled
1/4 cup cilantro, chopped
1 Tbsp olive oil
1/2 lime, juiced
Salt & pepper, to taste
Directions:
Combine all ingredients in a large bowl. Toss to combine flavors. Serve immediately.
